Lasagna Rollups
Recipe adapted from “Cookin’ Savvy”
Yields: 4-6 servings (1 rollup per serving)
8 lasagna noodles
1 pound ground beef
1 tablespoon garlic powder
1 tablespoon onion powder
15 ounces ricotta cheese
1 teaspoon rosemary (optional)
1 jar marinara sauce
2 cups mozzarella cheese, divided
Begin by boiling the lasagna noodles as directed on the package. Once cooked, drain them under cold water and set aside.
In the same pot, brown the ground beef, then mix in the garlic powder and onion powder. Incorporate the ricotta cheese; add rosemary if you like; stir in the marinara sauce and 1 cup of mozzarella cheese.
Preheat your oven to 350°F.
Spread a thin layer of the beef mixture in a baking dish. Lay the cooled noodles on a cutting board or parchment paper. Spoon the meat sauce mixture onto each noodle and roll it up. Arrange the rollups seam-side down in the baking dish. Top with the remaining meat sauce and sprinkle with the leftover mozzarella cheese.
Bake for 20 minutes.
