Apple Ricotta Crepes

Apple Ricotta Crepes

Yield: 12 crepes (2-3 crepes for each serving)

Ingredients for Crepes:

1 cup flour

1 tablespoon sugar

1/2 teaspoon salt

1 cup whole milk

2 eggs

1 teaspoon vanilla extract

butter, for cooking

Ingredients for Apple Topping:

butter

2 tablespoons brown sugar

Envy Apples, cut into slices or cubes

1/2 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

salt, to taste

maple syrup

Ingredients for Ricotta Filling:

1 cup ricotta cheese

1 lemon, zested and juiced

2-3 tablespoons sugar, to taste

To prepare the crepes: In a bowl, mix together flour, sugar, and salt. Incorporate milk, eggs, and vanilla extract, whisking until the mixture is smooth and silky. Refrigerate for a while.

For the apple topping: In a skillet over medium heat, melt butter and brown sugar until it bubbles and turns golden.

Add the prepared Envy Apples, along with cinnamon, nutmeg, and salt to taste; cook on medium-low heat until the apples are tender. Once cooked, remove from heat and drizzle with maple syrup.

For the ricotta filling: In a bowl, combine ricotta cheese, lemon zest, lemon juice, and sugar, mixing until well blended. Set aside.

In a nonstick skillet over medium-low heat, add a small amount of butter to melt.

Pour one ladle of the crepe batter into the pan, cooking until bubbles start to form, then flip and cook until golden brown. Continue with the rest of the batter, stacking the crepes to keep them warm and pliable.

Spread a thin layer of the ricotta mixture over each crepe and fold in half. Top with the apple mixture and serve immediately.
