1 large turkey breast (6-7 pounds), bone-in, skin-on, completely thawed

kosher salt

freshly ground black pepper

Glaze:

1/2 cup Busy Bee Raw Honey

2 teaspoons Dijon mustard

3 tablespoons apple cider vinegar

1 teaspoon kosher salt

1 teaspoon freshly ground black pepper

3 sprigs fresh thyme

1 clove garlic, peeled and crushed

Begin by preheating the oven to 500°F.

Generously season both sides of the turkey with salt and pepper, then allow it to rest at room temperature for one hour in a large roasting pan fitted with a roasting rack.

For the glaze, combine honey, orange juice, mustard, apple cider vinegar, salt, pepper, thyme, and crushed garlic in a medium saucepan over high heat.

Bring the mixture to a boil, then lower the heat to medium and let it simmer for about 15 minutes, or until it has reduced by two-thirds.

Remove from heat and set the glaze aside.

Place the roasting pan in the center of the oven and decrease the temperature to 350°F.

After 45 minutes of roasting, apply a layer of the glaze and continue to roast for an additional 10 minutes.

Brush on another layer of glaze, roasting for another 10 minutes.

Finally, apply one more layer of glaze, cooking until the internal temperature of the turkey reaches 165°F.

Take the turkey out of the oven and allow it to rest for 30 minutes.

Once rested, carve the meat from the bone, slice it, and drizzle with any remaining glaze before serving.
