Tortellini Soup with Meatballs

Servings: 6-8

4 cups beef broth

1 can (14 ounces) diced tomatoes

16 ounces frozen meatballs

19 ounces tortellini

6 ounces frozen spinach

1 tablespoon onion powder

1 tablespoon garlic powder

1 tablespoon Italian seasoning

3/4 cup grated Parmesan cheese, plus extra for garnishing, divided

Salt, to taste

Pepper, to taste

1/4 cup heavy cream

Bread, for serving

In a Dutch oven, combine beef broth and diced tomatoes. Rinse the empty can of tomatoes with water and add this to the pot. Incorporate the frozen meatballs, tortellini, and spinach. Heat the mixture over medium heat, then mix in the onion powder, garlic powder, Italian seasoning, and 3/4 cup of Parmesan cheese. Season with salt and pepper according to your preference.

Allow the mixture to cook for about 25 minutes, stirring occasionally. Finally, stir in the heavy cream and let it cook for an additional 5 minutes.

Serve the dish alongside bread and with more grated Parmesan cheese on top.
