White Chocolate and Pumpkin Pie Spice Popcorn Bites
Yields: 12 servings
12 cups of unsalted, unbuttered popcorn, popped
3 cups of white chocolate, chopped or in chip form
1 tablespoon of light olive oil
2 teaspoons of pumpkin pie spice
1/2 cup of toffee bits
1 teaspoon of flaked sea salt, crushed
Prepare a large, rimmed baking sheet by lining it with parchment or wax paper. Place the popped popcorn in a spacious mixing bowl.
In a microwave-safe container, mix the white chocolate, olive oil, and pumpkin pie spice; heat in the microwave on medium for 2-3 minutes, stirring every minute until the mixture is melted and smooth.
Drizzle the melted white chocolate mixture over the popcorn; add the toffee bits and toss everything together until well combined. Spread this mixture evenly onto the lined baking sheet, reaching the edges, and finish by sprinkling the sea salt on top.
Allow it to cool and then refrigerate for 1-2 hours, or until it has fully set. Once firm, break it into pieces for serving.
Cooking Tip: You can create your own pumpkin pie spice by mixing 3 parts ground cinnamon with 1 part ground nutmeg, 1 part allspice, and 1 part ground ginger.
