St. Patrick’s Day Stew

Preparation time: 30 minutes

Cooking time: 1 hour and 40 minutes

Yield: 6 servings

1 1/4 pounds chuck beef stew meat, cut into 1 1/2-inch cubes

1 teaspoon salt, plus more to taste, divided

1/4 cup olive oil

6 cloves garlic, minced

4 cups beef broth

2 cups water

1 cup stout beer

1 cup red wine

2 tablespoons tomato paste

1 tablespoon sugar

1 tablespoon dried thyme

1 tablespoon Worcestershire sauce

2 bay leaves

2 tablespoons butter

1 large onion, chopped

4 carrots, diced into 1/2-inch pieces

3 pounds russet potatoes, peeled and cubed

Freshly ground black pepper, to taste

2 tablespoons chopped fresh parsley

Start by seasoning the beef chunks with 1 teaspoon of salt. In a large pot over medium-high heat, warm the olive oil.

Dry the beef thoroughly with paper towels before adding it to the pot in batches to prevent overcrowding. Sear until browned on one side, then flip to brown the opposite side.

Once the beef is browned, add the minced garlic and sauté for about 30 seconds, or until aromatic. Pour in the beef broth, water, stout, red wine, tomato paste, sugar, thyme, Worcestershire sauce, and bay leaves. Stir to combine.

Allow the mixture to come to a simmer, then reduce the heat to low. Cover and let it simmer for 1 hour, stirring occasionally.

In a separate pot, melt the butter over medium heat. Add the chopped onions and diced carrots, cooking until golden, which should take around 15 minutes.

After the beef has simmered for an hour, incorporate the onions, carrots, and potato chunks into the pot. Season with additional salt and pepper as desired. Simmer uncovered until the beef and vegetables are tender, approximately 40 minutes. Remove the bay leaves and skim off any excess fat.

Garnish with fresh parsley before serving.
