Preparation time: 10 minutes

Cooking time: 20 minutes

Makes: 6 servings

Ingredients:

1 pound of ground beef

1 onion, diced

1 can (15 ounces) of tomato sauce

1 can (15 ounces) of kidney beans

1 can (14 1/2 ounces) of stewed tomatoes

1 can (10 ounces) of diced tomatoes with green chilies

1 sweet potato, cut into cubes

water (optional)

1 teaspoon of chili powder

a pinch of garlic powder

salt, to taste

pepper, to taste

sour cream (optional)

sliced avocado (optional)

In a large saucepan over medium heat, brown the ground beef along with the chopped onion until the beef is cooked through and the onion is soft, which should take about 5-7 minutes.

Add the tomato sauce, kidney beans, stewed tomatoes along with their juices, diced tomatoes with green chilies, and the cubed sweet potato. If you prefer a thinner consistency, add water as needed.

Season the mixture with chili powder and garlic powder, then add salt and pepper according to your taste.

Allow the mixture to come to a boil, then decrease the heat to low. Cover the pan and let it simmer for 15 minutes.

Serve the dish with sour cream and sliced avocado, if you like.
