Refreshing Watermelon Salad with Feta and Mint

1/4 cup of lemon vinaigrette
4 cups of diced watermelon
1/2 English cucumber, sliced into 1/4-inch half moons
1/2 small red onion, thinly sliced
1/4 cup of crumbled feta cheese
2 tablespoons of fresh mint, coarsely chopped
Begin by pouring the vinaigrette into the bottom of a large canning jar. Next, layer the jar with watermelon, cucumber, red onion, feta, and mint.
Seal the jar tightly, then shake gently to mix the ingredients. Keep chilled in the refrigerator until you’re ready to serve.
Alternative: Substitute Greek dressing for the lemon vinaigrette if desired.

Homemade Watermelon Ice Pops

1 whole watermelon
Fresh fruit pieces (such as grapes, strawberries, or kiwi)
Blend the watermelon and pour the puree into ice pop molds.
Add in pieces of fresh fruit, affix the caps, and place the molds in the freezer.
Enjoy once they are fully frozen.
